The aristocrats of the bean family, French beans can be cooked whole if they are small, just snip the ends. Cut larger ones into 2.5cm/1 inch chunks. Simmer or steam till just tender. French Beans are also known as Haricot Vert, French for Green Beans. These delicate beans must be harvested by hand one bean at a time. French Beans are favored by Chefs for their great flavor and elegant appearance.

SELECTION

Always look for the youngest, brightest and freshest looking beans that have crisp pods. Leave the ones that are wizened or discolored. For French Beans the optimum temperature 6-8 at relative humidity of 90-95%.

STORAGE

Keep fresh beans in perforated plastic bags in the refrigerator crisper; edible pod beans will stay fresh for 3 to 5 days, shell beans for 2 or 3 days. Refrigerate shelled beans in a plastic bag and use them within a day or two.

HANDLING & PREPARATION

Cook and eat as soon as you can to preserve texture, flavor and goodness. Keep in a cool, dry place. All beans, if young and tender, can be frozen.
